This weekend I felt as thought we had a breakthrough, i finally had some extra energy and decided to turn to what I love – to cook! I’ve always enjoyed cooking but since the LO made her appearance 4 months ago, I’ve barely had time to myself, let alone to take a pan out of the cupboard or even attempt to cook.
While the LO was having a nap and the sun was shining I decided today was the day. I quickly had a look around the fridge and freezer to see what I could pull together quickly. I decided to bake a loaf of my favourite spelt bread along with a pea and spinach frittata and beetroot salad. I would usually add some mixed leaves or a small side salad but we didn’t have anything in!
As much as I love to eat beetroot, I’d never actually cooked it myself or made it into a salad. After a quick look on Google, I found it to be quite time consuming it took around 1hour to boil two beetroots in salty water until they were soft and ready to eat (don’t think I’ll be doing that one in a hurry). It’s really simple though you literally just boil them, once they are ready the skin peels off and you chop it into little cubes. Squeeze over a little balsamic vinegar, I prefer balsamic glaze and voila beetroot salad 🙂
Next up was my frittata, I’d usually do pea and mint and add a touch of parmesan or goats cheese but I didn’t have that in either. So I whisked six eggs, seasoned them well with salt and pepper, defrosted some peas and spinach (drained the water) then added to the mix and popped it all in a frying pan on a low heat. After around 5 minutes I placed the pan under the grill for a further 5 minutes and checked it was cooked through. I have to say I really enjoyed a little cooking and it certainly brightened up my day.
